Coconut rice pudding with stewed plums

Heart-warming, sugar-free soul food for the whole family, simple recipe for cold fall days

There are certain recipes that simply do me good and caress my soul. It's not for nothing that the term soul food exists. These are often recipes or foods from our childhood that make us feel safe: Semolina porridge, fish sticks, spaghetti with tomato sauce, poor knights, rice pudding, custard - something different for everyone. For me, rice pudding has such an effect. I just love having a bowl of hot, steaming rice pudding with fragrant brown butter in my hand, snuggling up on the sofa with a book in my blanket and letting the whole world go by candlelight and enjoying it in my cozy little bubble. Do you also have such associations?
Here's a quick and easy recipe for you. The coconut rice pudding tastes interesting and delicious, warms the body and soul from the inside and is also a healthy dessert as it is made without household sugar.
Ingredients (for 4 people)
4 small cups of rice pudding
9 small cups of milk
1 pinch of salt, possibly 1 small pinch of brown sugar
half a can of creamy coconut milk
2 tbsp coconut flakes
half a glass of apple puree with pear
a sip of pear juice
butter
plums
cinnamon stick
a little water
a little lemon juice if necessary
some sugar/syrup to sweeten if necessary
Preparation of rice pudding
Rinse the rice pudding briefly under running water and place in a fairly large pot. I always use a pot that seems far too big at first and ends up being just big enough...
Add double the amount of milk (about 8-9 cups for 4 cups of rice pudding) and bring to the boil. Keep stirring so that it doesn't stick.
Once boiling, continue to simmer over a low heat, stirring constantly.
Add the coconut milk and coconut flakes.
Pour in a little more milk depending on the desired consistency.
Stir in the apple puree and pear juice and simmer a little more. Depending on how much liquid you add, the rice will be firmer to the bite or creamier - whichever you prefer.
Brown butter
Melt a knob of butter in a small pan until it starts to brown. Be careful, nothing can happen for a long time and then it will suddenly turn black... so it's best to stand next to it and remove it from the heat in good time. A few spoonfuls over the rice pudding taste delicious.
Plum compote
Cut the plums in half and put them in a pan. Plums that are a little older or not very aromatic or sour are also ideal.
Add the cinnamon stick and a little water and sweeten a little if necessary (depending on taste and type of plum) or season with a squeeze of lemon juice.
Leave to simmer for a while. By the time the rice pudding is ready, the compote will also be perfect.
(The compote also tastes delicious without rice pudding - for example with yoghurt, quark or vanilla ice cream).

Cooking time: about 25 minutes
Alternative suggestions for the topping (depending on taste)
Compote: either homemade (see above) or from a jar - apple, quince, pears, plums or whatever else you like.

Rice pudding also tastes great with brown butter and cinnamon sugar or a spoonful of apple puree. Unlike apple sauce, there is no added sugar in apple puree, only the fructose it already contains. We are a big fan of fruit purée in all its various forms. If the rice pudding is only prepared with apple puree for sweetening, my little son can also eat it without any problems, which he does enthusiastically - everything that comes off our plates tastes twice as good as any baby food...
